  1. Aroma: The scent of the matcha gives you clues about its freshness and flavour profile. For example, our matcha has floral, orchid-like aromas that suggest a delicate, refined taste, while vegetal or grassy aromas lean toward a more savoury, fresh matcha.

  2. Flavour Profile: Is the matcha sweet, bitter, or umami-forward?

    The balance of these flavours helps identify the cultivar. For example, Yabukita often brings smoothness with no astringency, while cultivars like Samidori may have a bolder, more umami-focused flavour.

  3. Body: This relates to the mouthfeel and texture. A full-bodied matcha may feel rich and velvety, while a lighter one feels more refreshing and crisp.
